Ingredients
• 12 eggs, boiled and peeled
• 4 slices bacon, cooked and crumbled
• 2 jalapeños (1 diced, 1 thinly sliced)
• 2 garlic cloves, minced
• 1/3 cup mayonnaise
• 2 teaspoons creole mustard
• 1 teaspoon smoked paprika
• 1/4 cup shredded Mexican cheese
Directions
Cut boiled and peeled eggs in half. Scoop yolks into mixing bowl. Add most of bacon but do reserve some for topping. Also add diced jalapeño, garlic, mayonnaise, mustard, paprika and cheese. Stir well with fork. Use small cookie scoop to fill each egg half. Top each egg with a jalapeño slice and a bit of crumbled bacon.
