Ingredients:
- 1 pound ground beef
- 1 pound hot breakfast sausage
- 2 cloves garlic, minced
- 2 cans whole tomatoes (I put in a bowl and crushed them)
- 2 cans tomato paste
- 2 tablespoons dried parsley
- 2 tablespoons dried basil
- 1/2 tablespoon sugar
- 2 ½ teaspoons salt
- 3 cups cottage cheese
- 2 whole beaten eggs
- ½ cups grated Parmesan
- 1 tablespoon olive oil
- 1 package lasagna noodles (I used fettucine noodles!)
- 1 pound mozzarella cheese
Directions
Boil pasta in a large pot of salted water and olive oil.
Meanwhile in a large skillet cook ground beef, sausage and garlic. Drain the fat. Return to skillet and add tomatoes, tomato paste, parsley, basil, sugar and 1 teaspoon salt. Let sauce simmer 45 minutes. (I probably only let mine simmer 20 minutes and it was great).
In a medium bowl mix cottage cheese, eggs, Parmesan and one more teaspoon of salt. Stir well.
I did not assemble this like true lasagna for sake of ease. I put the meat mixture on the bottom, then the noodles, then the cheese mixture. Then topped with mozzarella cheese. Sprinkle generously with extra Parm.
At this point you can freeze this, refrigerate it for 2 days, or bake immediately at 350 degrees for 20-30 minutes.
This makes a ton obviously. I like to freeze half for later or take to a friend!
