Mile High Biscuits

I’m not one to turn down a new biscuit recipe, and this one is a keeper for sure.

Ingredients

  • 4 cups flour
  • 4 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 1 cup butter, cut into cubes
  • 1 1/2 cups buttermilk
  • 1/4 cup butter, for brushing

Directions

Preheat oven to 450 degrees.  In a large bowl whisk the flour, baking powder, kosher salt, and baking soda.  Add butter and work the dough with your fingers until it is resembles coarse crumbs.  Stir in buttermilk and mix until combined. 

Turn out onto floured surface and knead until it comes together.  Press into an even rectangle with your hands.  Use a knife to slice into squares.  Place squares on baking sheet or stone.  Place in freezer for 15 minutes.

Remove from freezer and brush with melted butter.  Bake for 15-18 minutes until golden brown.
