Mexican Twice-Baked Potatoes

  • Baking potatoes (this recipe is for 4)
  • 1 pound hamburger meat
  • 1 package taco seasoning
  • 1/4 cup water
  • 1 tablespoon olive oil
  • Frozen bag of bell peppers and onions
  • 1 cup shredded cheddar jack cheese
  • 1 stick butter
  • Toppings:  sour cream, salsa, cilantro, jalapenos, corn


Bake potatoes.  Cook hamburger meat.  Add taco seasoning, water, oil, and veggies.  Simmer until veggies are tender.  When potatoes are done, hull them out and add the insides to stand mixer with butter and cheese.  Mix until combined.  Add meat mixture and mix again on low.  Fill mixture into potato shells.  Bake for 5-10 minutes.  Add desired toppings.
