Lemon Brownies

Brownies:

  • 2 cups sugar
  • 3 eggs, room temperature
  • 1 egg yolk
  • 1/2 cup butter, cut into cubes
  • 4 ounces white chocolate bar or chips
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 3 lemons zested
  • 2 tablespoons lemon juice (half of a lemon squeezed)
  • 2 cups flour
  • 1 tablespoon cornstarch
  • 1 teaspoon salt

Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Directions

Preheat oven to 325 degrees.  Put parchment paper in 9x9 baking pan and spray the paper. 

In a small sauce pan add the butter and white chocolate.  Heat on medium low until fully melted.  Remove from heat.

In a medium bowl sift the flour, cornstarch and salt.

In a mixer beat the eggs, yolk, and sugar on high for 5 minutes.  Add in butter/white chocolate mixture, oil, vanilla, lemon zest and lemon juice.  Mix on low until just combined

Add in dry ingredients and mix on low.  Pour into baking dish and bake 40 minutes or until done.  Let cool before adding glaze. 

To make glaze whisk the powdered sugar and lemon juice.  I had to add a little bit of water to thin it.  Pour over sliced brownies.
