Lemon Bar White Chocolate Brownies

I’ll never make lemon bars without a brownie base!

White Chocolate Brownies

• 3/4 cup butter
• 6 ounces white chocolate, chopped
• 1 1/2 cups sugar
• 2 eggs
• 2 teaspoons vanilla
• 1-2 teaspoons fresh lemon zest
• 2 1/2 cups flour
• 1/4 teaspoon salt
• 1/2 teaspoon baking powder


Lemon Bar Layer

• 4 eggs
• 1 1/3 cups sugar
• 1 teaspoon fresh lemon zest
• 2/3 cup fresh lemon juice (from 4-5 lemons)
• 1/4 cup flour
• Powdered sugar, for dusting

Directions

Preheat oven to 350 degrees. Grease a 9x13 baking dish with cooking spray.

Make the brownies: combine butter and white chocolate in large microwave safe bowl. Heat for 1 minute and stir afterward until smooth. Stir in sugar, eggs, vanilla, and lemon zest. Mix until well combined. Stir in flour, salt, and baking powder until smooth. Spread batter evenly into prepared pan. Bake 20-22 minutes until brownies are just slightly set but still soft in the center.

Make the lemon bar layer: in a medium bowl whisk eggs, sugar, lemon zest, lemon juice, and flour until smooth and well combined. Pour lemon mixture over top of warm brownies. Return to oven and bake until lemon layer is set, about 20 minutes. It is ok if there are bubbles on the surface.

Let the bars cool completely, then dust heavily with powdered sugar.
