Jalapeno Popper Chicken Soup

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup diced jalapeño’s
  • 1 diced yellow onion
  • 1 package chicken breasts, tenderized and cut into bite size pieces
  • 1 package Ranch dressing mix / seasoning
  • 4 cups chicken broth
  • 8 ounces cream cheese spread, softened
  • 2 cups sharp cheddar cheese, freshly grated


Heat a soup pot over medium heat.  Add olive oil, butter, garlic, jalapeño’s and onion.  Sauté until softened.  Add chicken, Ranch mix, and broth.  Increase the heat a touch and let it simmer for 25 minutes to cook the chicken. Strain chicken from soup and remove to a bowl.  Add cream cheese and shredded cheddar.  Whisk until all is melted together.  Return chicken back to the pot and heat through.
