Ingredients:
- 1 pound boneless skinless chicken thighs or tenders, cut into cubes
- Salt & pepper to taste
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1/2 purple onion, sliced
- 1 tablespoon olive oil
- 1 cup pineapple chunks
- 1/2 cup Sweet Baby Ray’s Hawaiian BBQ sauce, plus more for drizzling
- Juice of 1 lime
- Cilantro for garnish
Directions
Preheat oven to 350 degrees. Season chicken with salt, pepper, and olive oil. Mix with bell peppers and onion. Add 1/2 cup BBQ sauce and mix. Spread evenly onto a sheet pan. Bake for 20 minutes. Remove from oven and add pineapple chunks. Cook 10-20 more minutes. Remove from oven again and squeeze lime juice over. Drizzle extra BBQ sauce if desired as well as cilantro,
