Creamy Potluck Potatoes

  • 3 pounds potatoes, peeled & cut up (about 6 cups)
  • 1 can cream of chicken soup
  • ½ cup sour cream
  • 3 ounces cream cheese, softened
  • 2 tablespoons butter, melted
  • ¾ cup shredded cheddar cheese
  • ¼ cup sliced green onions
  • ¼ cup milk
  • ¼ teaspoon garlic salt
  • ¼ teaspoon pepper


In a large pot, boil potatoes until fork tender (usually 20 minutes after the water begins boiling).  Drain. 

In a large bowl stir together soup, sour cream, cream cheese, and butter.  Stir in ¼ cup of the cheese, 3 tablespoons of green onions, milk, garlic salt, and pepper.  Stir in potatoes.  Transfer mixture to baking dish.  Bake in 350 degree oven for 25-30 minutes.  Sprinkle remaining cheese and let stand until cheese melts.  Sprinkle with remaining green onion.
