Ingredients:
- 3 tablespoons butter
- Rotisserie chicken, cut up
- Salt and pepper
- 1 yellow onion, diced
- 1 stick celery, diced
- 1 tablespoon olive oil
- 1 can cream of chicken soup
- 2/3 cup sour cream
- ½ cup milk
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon mustard powder
- 2 ½ cups shredded cheddar cheese
- 1 sleeve Ritz crackers
- 2-3 extra tablespoons butter for topping
Directions
Preheat oven to 350 degrees. Melt 3 tablespoons butter in skillet and sauté onion and celery. Add olive oil and rotisserie. Cook on low for 3-5 minutes. Add soup, sour cream, milk, seasoning, and ½ cup of cheese. Remove from heat and pour into 9x13 baking dish. Crush crackers. Melt butter and stir into crackers. Spread evenly over casserole. Top with remaining cheese. Cover with foil and bake 20 minutes. Remove foil and increase heat to 400 degrees. Bake 5-10 more minutes. Serve over rice or with potatoes of your choice.
