Ingredients
• 9-12 lasagna noodles
• 1 1/2 tablespoons Tony’s Cajun seasoning
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon thyme
• 1 package boneless skinless chicken breasts
• 2-3 tablespoons olive oil
• 1/2 stick butter
• Red bell pepper, diced
• Onion, diced (you can use 3/4 bag of frozen peppers & onions)
• 1 pint heavy cream
• 2 1/2 cups Italian cheese
Directions
Boil noodles in water and a splash of olive oil. Drain and lay on non-sticky surface (don’t use a paper towel!).
Mix all spices together.
Slice chicken breasts in half lengthwise. Dice. Baste with olive oil and season with 1/2 of spice mixture. Cook in skillet on stove in heavy skillet in olive oil and butter. Remove chicken to a bowl, reserving butter/oil in skillet.
Preheat oven to 400 degrees at this point.
Add bell pepper and onion (and more butter if you want/need) to the skillet. Add heavy cream. Reduce heat. Add 1 cup Italian cheese. Whisk gently. Add remaining seasoning blend and salt and pepper to your taste.
Turn heat off. Layer sauce in bottom of 9x13 baking dish. Then noodles, then chicken. Repeat layers. Top with remaining cheese.
Bake for 15-20 minutes.
