Crawfish Monica

A must must try! This cheesy crawfish pasta is heavenly!


  • 1 stick butter
  • 1 yellow bell pepper
  • Yellow onion
  • Green onion
  • Jalapeno to your taste, diced
  • White wine
  • 2 cups half and half
  • 1 pound crawfish tails
  • Better than Bouillon lobster base
  • Cajun seasoning
  • 1 pound of your favorite noodles
  • Parmesan and parsley for topping


Melt butter in large skillet.  Add bell pepper, onions, and jalapeno.  Season with cajun seasoning.  After the veggies are soft, add a few spices of white wine and half and half.  Let the liquid reduce.  Add crawfish tails and lobster base.  Season with more cajun seasoning.  Let it come to a boil and reduce to simmer.  Add cooked noodles.  Top with parmesan until it’s cheesy enough to your liking.  Sprinkle fresh parsley on top.
