- 1 cup flour
- 2 pounds chicken tenders
- 2 cans Italian bread crumbs
- 3 eggs
- Kosher salt
- Freshly ground black pepper & white pepper
- 1 cup BBQ sauce
- 1/2 cup brown sugar
- Juice of 2 limes
- 1 teaspoon garlic powder
- Ranch dressing for serving
Preheat oven to 425 degrees. In a large ziplock combine flour and chicken tenders. Shake until fully coated.
Set up a dredging station: in one shallow bowl add bread crumbs. In another bowl whisk eggs and 2 tablespoons water. Dip chicken into egg mixture then coat in bread crumbs. Transfer to baking sheet and season generously with salt, pepper and white pepper.
Bake until golden and crispy, 20-25 minutes.
While the chicken is baking, in a small saucepan whisk BBQ sauce, brown sugar, lime juice and garlic powder. Simmer 5 minutes.
Once chicken is out of the oven, toss into large bowl and coat with sauce. Stir until all pieces are covered. Serve with ranch.
