- Brioche bread slices
- 2 sticks butter, softened but not melted
- 1 cup sugar
- 3 teaspoons cinnamon
- 2 teaspoons vanilla
- 2 eggs
- Milk or heavy cream
- 1 teaspoon vanilla
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
- Icing: 1 tablespoon powdered sugar and 1 teaspoon milk or heavy cream
Make your cinnamon toast spread: In a small bowl smush the 2 sticks softened butter with the 1 cup sugar, 3 teaspoons cinnamon and 2 teaspoons vanilla. This stores so well in the fridge, so keep your extra for later. Spread onto brioche slices from end to end covering the whole slice. Top with another slice of brioche to make a sandwich.
Heat your griddle to medium heat.
Next, in a shallow dish whisk the eggs with milk and 1 teaspoon vanilla. Place the sandwich in the mixture and let each side soak for a few seconds. Place directly on the griddle and cook as you would any other French toast. Flip after it begins to lightly caramelize. Cook the other side.
Mix the brown sugar and 1/2 teaspoon of cinnamon together and sprinkle over the cooked French toast.
Using a fork in a tiny bowl, mix the 1 tablespoon powdered sugar and 1 teaspoon milk/heavy cream. Drizzle over the French toast.
