- 7 Yukon Gold potatoes
- 4 tablespoons butter
- 1 yellow onion, sliced in strings
- 3 cloves garlic
- 1/4 cup flour
- 1 1/2 cups of Half and Half
- 3/4 teaspoons rosemary
- 1/2 teaspoons oregano
- 1/4 teaspoon thyme
- 2 cups cheddar cheese, freshly shredded
- 1/2 cups Gruyère cheese, shredded
- 1 cup cooked ham, diced
- Topping: 1/4 cup Parmesan cheese, finely grated
Prepare the cheese sauce: Melt butter in skillet. Add onions and cook over medium heat for 20 minutes, stirring occasionally. The onions should begin to brown and caramelize. Add minced garlic and cook one more minute. Add flour and stir with a wooden spoon to form a paste. Heat for 1 minute. Temper the Half and Half by heating in microwave for 30 seconds. Add to skillet and stir. Add spices and simmer 5 minutes.
Sprinkle in 1 1/2 cups cheddar, reserving the remaining 1/2 cup for topping. Add all of the Gruyère. Mix in ham, reserving a little to top with. Preheat the oven to 400 degrees. Peel potatoes and slice thinly. Layer 1/3 of potatoes in dish, then 1/3 of sauce. Repeat two more times.
Top with remaining cheeses and ham. Cover and bake 30 minutes. Remove foil and top with Parmesan. Return to a 375 degree oven and bake 20 more minutes.
