Fuss-free, one pot supper!

• 2 frozen boneless, skinless chicken breasts*
• Seasoning salt
• Cajun seasoning
• 6 small ears of corn
• 1 onion, quartered
• 2 potatoes, cut in chunks
• 2 sticks butter


Preheat oven to 350 degrees. In Dutch oven that has a heavy lid place your chicken on bottom. Season with seasoning salt and Cajun seasoning. Add onion, corn, and potatoes. Cut butter into chunks and place on top. Put lid on Dutch oven and place in oven. Do not uncover during the cooking process. If using frozen chicken cook for 3 hours. If using thawed chicken cook 2 - 2 1/2 hours.

*The beauty of this recipe is of course to be able to cook it with frozen chicken. I use a combo of thawed thinly sliced boneless skinless chicken breasts and chicken thighs. (Don’t hate our house, we love dark meat)! You can also sub the chicken for pork chops.
