• 16 ounces frozen sliced strawberries, thawed, and divided
• 1 box yellow cake mix
• 3 eggs
• 3/4 cup oil
• 3 ounce box strawberry jell-o
• 1/4 cup butter, softened
• 4 ounces cream cheese, softened
• 1 teaspoon vanilla
• 3 cups powdered sugar
• 1/4 cup strawberry purée (from above)
Preheat oven to 350 degrees. Add the thawed strawberries to a blender or food processor and purée. You will need 1 cup of the strawberries for the cake and 1/4 cup for the frosting.
To make the cake mix the cake mix, eggs, and oil in a large bowl until well combined. Add jell-o and 1 cup of strawberry purée. Mix well. Pour into greased cake pan and bake until done. Let cake cool.
While cake is baking make your frosting. Using an electric mixer, cream the butter and cream cheese together. Add vanilla, powdered sugar, and strawberry purée. Frost cake.
*Instead of using the strawberry puree in the frosting I used my homemade strawberry jam.
