Shortcut Sugar Cookies

My personal favorite Christmas cookie!

Cookie Dough:

  • 1 cup softened butter
  • 1 cup oil
  • 1 cup sugar
  • 1 cup powdered sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 ½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar 

Frosting:

  • 1/2 cup softened butter
  • ½ cup shortening
  • 4 cups powdered sugar
  • 3 tablespoons milk
  • 1 tablespoon vanilla 

Directions 

Using electric mixer, beat together the butter, oil and sugars until light and fluffy.  Mix in the eggs and vanilla. 

 Whisk remaining dry ingredients together and then mix into butter mixture.  

Line two jellyroll pans with foil.  Lightly spray with cooking spray.  Divide the dough between the two pans and press into even layers with floured hands.  Bake 15-20 minutes until top is barely golden brown and the center looks set.  Let cool completely.  Cut into shapes! 

Make frosting:  in a stand mixer using the whisk attachment, mix the butter and shortening, scraping down the sides as needed.  Add 1 cup powdered sugar and 1 tablespoon milk.  Whisk until smooth.  Repeat 1 cup and 1 tablespoon at a time until all is mixed.  Add vanilla.  Spread onto cutout cookies.  Top with sprinkles.

I could not be a bigger fan of this recipe.  No chilling required and mess is minimal!  Kids love to cut these out.  I make these for almost every holiday.  Oh, and that frosting is to die for!
