Cookies
- 1/2 cup peanutbutter
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/3 cup sugar
- 1 egg, room temperature
- 1/2 teaspoon vanilla
- 2 tablespoons plus 1 cup flour
- 1/2 cup old fashioned oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 tablespoon corn starch
- 1/4 teaspoon salt
Frosting
- 4 ounces cream cheese, softened
- 2 tablespoons butter softened
- 3/4 cup powdered sugar
- 3 tablespoons cocoa
- 1/2 teaspoon vanilla
- 2-3 tablespoons milk
Directions
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Cream the peanut butter, butter, and both sugars. Add eggs and vanilla and mix until just combined.
Add flour, oats, baking powder, baking soda, corn starch and salt. Mix just until no white streaks remain.
Using a large cookie scoop, scoop onto baking sheet. Press with the bottom of a drinking glass gently. Bake 12-13 minutes. Let cool.
To make the frosting, cream the cream cheese, butter, and vanilla until smooth. Mix in powdered sugar. Sift in cocoa and pour in 2 tablespoons of milk. Mix until fluffy. If frosting seems too thick use another tablespoon of milk. Frost each cooled cookie.
