Ingredients:
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, diced
- 6 cloves garlic, minced
- 1 (28 ounce) can fire roasted tomatoes
- 4 cups beef broth (I used about 5 cups)
- 1 red bell pepper, chopped
- ¼ teaspoon Italian seasoning
- ½ teaspoon red pepper flakes
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 pound frozen meatballs
- 1 – 1 ½ cups orzo pasta
- ¼ cup chopped fresh basil
Directions
In a soup pot add olive oil, butter, onions and bell pepper. Sauté until translucent. Add garlic & cook one more minute. Add tomatoes, beef broth, Italian seasoning, red pepper flakes, salt, and pepper. Add meatballs. Turn heat to high and bring to a boil.
Once soup is boiling add orzo. Turn heat to low and let cook 15 minutes.
Top with basil for serving.
