Ingredients:
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 pound smoked sausage, sliced
- Cooked shrimp
- 1 can diced tomatoes
- 2 cups chicken broth
- Tony’s cajun seasoning
- Cayenne
- Kosher salt & black pepper
- 4 ounces cream cheese
- 2 green onions, sliced
- 8 ounces orzo
Directions
In a large skillet heat oil and butter. Add onion and peppers. Sauté until soft. Add garlic and cook 1 more minute. Add sausage and cook 2 more minutes. Add orzo and stir to toast for 2 minutes. Add tomatoes, broth, and seasonings. Bring to a boil. Reduce heat and simmer until orzo is tender, about 10 minutes, stirring occasionally. Add cream cheese and stir until melted. Add cooked shrimp and green onions. Heat on low 5 minutes.
