Moscow Mule Cupcakes

  • 1 box white cake mix
  • 1 (12 ounce) can ginger beer
  • 1/2 teaspoon ground ginger


  • 2 sticks butter, softened
  • 4 cups powdered sugar
  • 1/4 cup vodka
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice
  • More zest for garnish


Preheat oven to 350 degrees.  With an electric mixer mix the cake mix, ginger beer, and ground ginger.  Fill into cupcake tins.  Bake until done.

Let cool.  Make frosting in the meantime.  In a large bowl beat butter until fluffy.  Add 3 cups of powdered sugar and beat until smooth.  Add vodka, lime zest, and lime juice.  Beat until incorporated.  Add remaining 1 cup of powdered sugar and beat until smooth again. 

Frost cupcakes and using zester, grate more lime over the top.
