Mexican Chopped Salad

A chopped salad chock full of all the Mexican yumminess!

Dressing

• 1 cup mayo
• 1/2 cup buttermilk
• 2 tablespoons dry Ranch dressing mix
• 2 tablespoons taco seasoning
• 2 tablespoons lime juice
• 1/2 teaspoon cumin
• 1/4 teaspoon garlic powder
• 1/4 teaspoon onion powder


Salad

• 1 head romaine, chopped
• 1 can black beans, drained
• 1 can corn, drained
• 1 tomato, chopped
• 1 avocado, diced
• 1/4 cup cilantro, chopped

Directions

In a large bowl toss together all ingredients for the salad.

In a separate bowl whisk all ingredients for the dressing. Pour desired amount over lettuce and toss.

*You can add cheese or even taco meat (yum!). The leftover dressing will keep in the fridge for 3 weeks.
