Kentucky Butter Cake

Cake

  • 3 cups flour minus 3 tablespoons, sifted
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups sugar
  • 1 cup butter, room temp
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 cup buttermilk

Glaze

  • 1/2 cup butter
  • 3/4 cup sugar
  • 3 tablespoons Kailua
  • 2 teaspoons vanilla

Directions

Preheat oven to 325 degrees.  Grease a bundt pan.  Whisk together flour, salt, baking powder, and baking soda. 

In a separate large bowl, use electric mixer to cream the sugar and butter for 3 minutes.  Add eggs, one at a time, beating well after each addition. Add vanilla and almond extracts.

Alternately add flour mixture with buttermilk, beginning and ending with flour mixture.  Pour into bundt pan and bake for 1 hour. Turn out onto cake plate.

Make the glaze:  in a sauce pan, melt the butter with the sugar and Kailua over medium heat until bubbly.  Do not boil.  Stir to dissolve sugar.  Remove from heat and add vanilla. 

Using a skewer, poke holes in the warm cake.  Do not poke all the way to the bottom.  Slowly pour the warm sauce over the warm cake.
