If you have never perfected the art of homemade butter beans or purple hull peas then this breakdown is for you! Someone recently asked me how to make these, and I thought, gosh, a tutorial would be great! These are so easy and just take some simmer time on your stove. I love making a big pot of these for us to enjoy all week with whatever we are having for supper.
Here is my foolproof method:
In a heavy bottom sauce pan add 3 strips of bacon cut in half and 1/2 stick butter. Turn the heat on to low. You want to lightly cook the bacon without frying it. The bacon should look very chewy and not done. Once you reach this point fill the pot with water and heavily salt and pepper it. Bring to a boil. Once boiling add the butter beans or peas. Add a pinch of sugar (this takes the bite out of the fresh peas). Bring to a boil again. Once boiling, cover the pot and turn the heat to a medium simmer for at least 2 hours. The longer they simmer the better. Enjoy!
