Fruity Pebbles Muffins

Fun to make, look at and eat!

Crumble Topping:

  • 2/3 cup flour
  • 1/3 cup brown sugar
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 4 tablespoons butter, melted
  • 1/3 cup Fruity Pebbles cereal

Muffins:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup oil
  • 1/2 cup milk
  • 2 teaspoons vanilla
  • 1/2 cup Fruity Pebbles cereal

Vanilla Glaze:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 3 teaspoons milk

Directions

Make crumble topping:  whisk flour, sugars and cinnamon.  Add the melted butter and mix with a fork until crumbs begin to form.  Gently stir in cereal.  Do not overmix.  Place in fridge while you make the muffin batter.

Preheat oven to 400 degrees. In a large bowl whisk flour, sugars, baking powder and salt.  In another bowl add egg, oil, milk and vanilla.  Whisk well.  Pour wet ingredients over dry ingredients and mix by hand until just combined.  Gently fold in Fruity Pebbles.  Spoon into greased muffin tin or paper baking cups.  Add crumble topping to each one.  Bake for 5 minutes then lower temp to 350 degrees and bake another 13 minutes.  Let cool.

Make the glaze:  in a small bowl whisk ingredients together.  Drizzle over muffins.
