Fresh Herb Roasted Potatoes & Onions

Ingredients:

  • 1 tablespoon sea salt and coarse black pepper
  • 4 tablespoons butter
  • 1 onion, diced
  • 2 tablespoons minced garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • OR can sub all 4 spices above for 2 tablespoons Italian herb seasoning blend
  • 1 pound Yukon gold potatoes, halved

Directions

Preheat oven to 425 degrees.  Line a baking sheet with parchment paper or cooking spray.

Melt butter in pan and add onions, garlic and herbs.  Cook 2 minutes. 

Arrange potatoes evenly on baking pan.  Drizzle butter and onion mixture over potatoes.  Sprinkle with salt and pepper.  Toss potatoes in the pan lightly to coat. 

Roast 20-30 minutes.
