Ingredients:
- 1 tablespoon sea salt and coarse black pepper
- 4 tablespoons butter
- 1 onion, diced
- 2 tablespoons minced garlic
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- OR can sub all 4 spices above for 2 tablespoons Italian herb seasoning blend
- 1 pound Yukon gold potatoes, halved
Directions
Preheat oven to 425 degrees. Line a baking sheet with parchment paper or cooking spray.
Melt butter in pan and add onions, garlic and herbs. Cook 2 minutes.
Arrange potatoes evenly on baking pan. Drizzle butter and onion mixture over potatoes. Sprinkle with salt and pepper. Toss potatoes in the pan lightly to coat.
Roast 20-30 minutes.
