Creamy Ranch Chicken

Your next week night meal.


  • Chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper
  • 4-6 tablespoons butter, melted
  • 3 tablespoons olive oil
  • For serving: baked potatoes, mashed potatoes, or rice


  • 1 can cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream at room temperature
  • ½ teaspoon onion powder
  • 1 package Ranch dressing mix


Slice chicken in half lengthwise.  Pound with meat tenderizer.  Sprinkle each side of chicken with Italian seasoning, salt, and pepper. Brush both sides with melted butter.  Heat oil in large skillet.  Add chicken and cook 4-5 minutes each side, until golden brown crust forms. 

Make sauce:  remove excess oil from skillet.  Add all sauce ingredients over medium heat.  Whisk well.  Let it bubble gently and reduce 5 minutes.  Add chicken ands poon sauce over top.  Cover skillet partially and let chicken heat through.  Cook 10 minutes.  Serve over baked potatoes, spooning extra sauce over.  Can also add grated cheese and bacon pieces.
