Ingredients:
- 1 rotisserie chicken, shredded
- 1 onion, diced
- 4 cloves garlic, minced
- 4 tablespoons butter
- 2 tablespoons flour
- 3 cans chicken broth
- 4 cups Half & Half
- 2 cans cream of chicken soup
- 1 cup Pace’s salsa
- 1 frozen package lightly seasoned corn, heated
- 2 teaspoons cumin
- 3 tablespoons Mexican seasoning
- 1 can Rotel, drained
- 4 ounces Hatch green chiles
- For serving: cilantro, Mexican cheese, tortilla chips, green onions
Directions
In soup pot melt butter and sauté onion and garlic. Add flour, and stir 1 minute. Add broth and Half & Half. Bring to boil, reduce heat and simmer. Add soup, salsa, corn, seasonings, Rotel, chiles, & 1 handful of cilantro. Heat 15 minutes. Serve with desired toppings.
