Creamy Chicken Tortilla Soup

One of my favorite soups.

Ingredients:

  • 1 rotisserie chicken, shredded
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 3 cans chicken broth
  • 4 cups Half & Half
  • 2 cans cream of chicken soup
  • 1 cup Pace’s salsa
  • 1 frozen package lightly seasoned corn, heated
  • 2 teaspoons cumin
  • 3 tablespoons Mexican seasoning
  • 1 can Rotel, drained
  • 4 ounces Hatch green chiles
  • For serving: cilantro, Mexican cheese, tortilla chips, green onions 

Directions 

In soup pot melt butter and sauté onion and garlic.  Add flour, and stir 1 minute.  Add broth and Half & Half.  Bring to boil, reduce heat and simmer.  Add soup, salsa, corn, seasonings, Rotel, chiles, & 1 handful of cilantro.  Heat 15 minutes. Serve with desired toppings.
