Boursin Twice Baked Potatoes

Boursin makes all things dreamy!

Ingredients:

  • 5 baking potatoes
  • 2 packages garlic & herb Boursin cheese
  • 4 tablespoons butter
  • Olive oil
  • Flaky salt
  • Freshly cracked black pepper
  • 1/3 cup half & half or heavy cream
  • 1/3 cup minced green onions, plus more for topping
  • Real bacon pieces

Directions

Preheat oven to 400 degrees.  Poke holes in the potatoes with a fork. Rub in olive oil.  Sprinkle flaky salt all over them and place on baking sheet.  Crack black pepper over the tops of them.  Bake for 1 hour or until done.

Let cool before removing the tops lengthwise.  Scoop out the tops and the hulls into a mixing bowl.  Add in butter, half & half and Boursin.  Mix well with mixer.  If the mixture is too thick add another splash of cream. 

Return stuffing to the potato hulls.  Heat in 350 degree oven until warm.  Top with green onions and bacon pieces.

(Orrrrrrrrrr do not stuff the shells and just serve this as a perfect side dish)!
