Wings
- 3 pounds chicken wings and/or drummettes
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
Sauce
- 1 cup honey
- 1 tablespoon BBQ sauce
- 1 table Tabasco
- 3 tablespoons apple cider vinegar
- 3 tablespoons diced jalapeño peppers from a jar
For Serving
- Chopped cilantro
- Ranch dressing
Directions
Preheat the oven to 400 degrees. Line a sheet pan with foil and top with a wire baking rack.
Prepare the wings: evenly space the wings on the baking rack and sprinkle both sides with salt, pepper, and paprika. Bake for 25 minutes.
Meanwhile make the sauce: in a small sauce pan combine the honey, BBQ sauce, hot sauce, and vinegar. Add peppers. Stir to combine and bring to a low boil over medium heat. Reduce heat to low and simmer. Stir occasionally.
Remove the chicken from the oven and using tongs, turn over. Return to oven and bake another 20 minutes. Remove the sauce from heat.
Turn the oven broiler on. Meanwhile, dunk the wings one by one in the sauce using tongs, coating completely. Replace each one on the wire rack as you go. Broil until the coating is slightly caramelized, about 3 minutes. Watch to make sure they do not burn!
Serve warm with a sprinkle of cilantro and Ranch dressing.
