Ingredients


• 8-10 pieces bacon, chopped and cooked
• 1 pound breakfast sausage
• 1 medium bag frozen hash browns, thawed
• 9 eggs
• 1 teaspoon garlic powder
• 1 1/2 cups cottage cheese
• 2 cups shredded cheddar cheese
• 2 cups shredded Mexican cheese
• Seasoning salt & white pepper

Directions

Preheat oven to 350 degrees. Grease 9x13 baking dish. Cook sausage and drain. While sausage is cooking place eggs and cottage cheese in a blender and process until smooth. In a large bowl combine the sausage, hash browns, egg mixture, garlic powder, cheese, seasoning salt, and pepper. Stir well. Add most of the bacon but leave some for sprinkling on top. Stir again. Pour into casserole dish. Top with leftover bacon pieces. Bake for 55-60 minutes.
