Tres Leches Cake

Cake Ingredients
• 1 1/4 cups flour
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 5 eggs, divided
• 1 cup sugar, divided
• 2 teaspoons vanilla
• 1/2 cup milk


Milk Mixture
• 2/3 cup whole milk
• 14 ounce can sweetened condensed milk
• 12 ounce can evaporated milk
Topping
• 2 cups heavy whipping cream
• 1/4 cup powdered sugar
• 1 teaspoon vanilla

Directions

Preheat oven to 350 degrees. Combine flour, baking powder, and salt. Stir with a fork. In large stand mixer bowl combine egg yolks (place egg whites in another bowl) along with 3/4 cup sugar. Stir until fluffy. Add vanilla and stir. Add dry ingredients to wet ingredients. Stir. Add milk. Stir again. Whisk egg whites in stand mixer until foamy and white In color. Mix in remaining 1/4 cup sugar. Continue mixing until peaks form. Fold egg white mixture in batter. Grease a 9x13 pan and pour batter in. Bake 30 minutes. When cake has cooled to room temperature, make the milk mixture. Poke holes all around cake with a fork and pour mixture over. Cover and refrigerate at least 4 hours or overnight.

Make topping: Add heavy cream to stand mixer and whip on high speed until thickened. Add in powdered sugar and vanilla. Mix until peaks form. Spoon onto cake and spread with spatula. Serve with fresh fruit. Sprinkle with cinnamon if desired. Keep cake refrigerated.
