Taco One Pot Pasta

In one pot straight to in your belly!


  • 1 pound ground chuck
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 package taco seasoning
  • 1 small can diced green chiles
  • 4 cups chicken broth
  • 8 ounces uncooked small pasta
  • 1 can enchilada sauce
  • 1 cup Mexican cheese, shredded
  • 2 cups cheddar cheese, shredded


Cook ground beef and onion in a large skillet.  Drain fat.  Return to skillet. Add garlic, taco seasoning, and green chiles.  Cook for 3 minutes.  Add broth, uncooked pasta, and enchilada sauce.  Stir well.  Bring to a boil then simmer for 15 minutes.  Stir occasionally.

Combine cheeses and stir in 2 cups of it gently.  Top with remaining cheese to serve.
