- 1 yellow onion, diced
- 2 tablespoons butter
- 1 can pinto beans with bacon (I used a jalapeno bacon can)
- All the shredded cheese
- Ritz crackers or Fritos for serving
In a small cast iron skillet, caramelize the onions with the butter by cooking at a slow simmer until the onions are yellowed and starting to char. Pour the can of beans over. (If you did not use a saucy bean, I would suggest drizzling some BBQ sauce for added sweetness). Let simmer on low. Once you are ready to serve sprinkle the shredded cheese over evenly. Do not stir, just let the heat of the beans melt it. Serve straight from the skillet!
