Shrimp Ramen

Totally divine.

  • 2 pounds large shrimp, peeled
  • 2 packets Ramen noodles, seasoning packets discarded
  • 2 limes
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 2 tablespoons hoison sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • ¼ cup heavy cream
  • ¼ cup chopped fresh parsley
  • ¼ cup shredded Parmesan

Heat grill or oven to 350 degrees.  Place shrimp into bowl and drizzle with olive oil.  Season with salt, pepper, garlic powder and smoked paprika.  Squeeze the juice from half a lime.  Marinate shrimp for 30 minutes.  If using wooden skewers soak them in the water while shrimp are in fridge.

Skewer the shrimp and grill 2-3 minutes on each side.  Finish with a squeeze of lime juice.

Boil noodles.  Drain.

Meanwhile heat a large saute pan on medium heat.  Add butter and garlic.  Cook 1-2 minutes.  Add hoison, soy sauce, sriracha, and heavy cream.  Stir until smooth and well mixed.

Stir in chopped parsley and Parmesan.  Add in shrimp and noodles.  Toss gently to coat.
