Shortcut Caramel Cake

Such a great go-to recipe!


  • 1 box yellow cake mix
  • 4 eggs, room temp
  • 1 cup milk, room temp
  • ½ cup butter, melted
  • 2 ½ teaspoons vanilla


  • 1 cup light brown sugar
  • ½ cup butter, softened
  • ¼ cup evaporated milk (use more if icing is too thick)
  • 2 cups powdered sugar


Preheat oven to 350 degrees.  Grease a 9x13 baking dish.  Mix all cake ingredients and pour into pan.  Bake 22-25 minutes until done.  Cool.

To make icing, melt butter.  Add brown sugar and let melt.  Bring to a simmer and cook 5 minutes.  Add evaporated milk.  Stir then remove from heat.  Measure powdered sugar into mixing bowl.  Pour butter mixture in and blend with hand mixer until all lumps are gone.  Pour over cake.
