Sheet Pan Pancake

Breakfast for a crowd or for your week!

Cinnamon Sugar Topping:

  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • ¼ teaspoon cinnamon 


  • 2 cups buttermilk
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 tablespoons butter, melted & divided
  • 2 cups flour
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup blueberries (optional)
  • Strawberries, sliced (optional)


In a small bowl whisk topping ingredients with a fork.  Preheat oven to 400 degrees.  Spray 11x17 pan with cooking spray.  Whisk buttermilk, egg, vanilla, & 2 tablespoons melted butter.  In a separate large bowl whisk all dry ingredients.  Pour wet ingredients into dry ingredients & mix well.  If adding berries fold in.  Spread into baking pan.  Bake 12-13 minutes.  Remove from oven & baste remaining butter with basting brush.  Sprinkle topping over evenly.  Cut into large squares.  Serve with syrup. 

*This is a favorite of my boys for breakfast. I usually serve the fruit on the side but will sometimes bake it in it.  You could also add chocolate chips or any other topping or mix-in you like.
