Ingredients

  • 1 pound bacon
  • 1/2 onion, finely chopped
  • 3 cloves garlic, minced
  • 2/3 cup cornmeal
  • 2/3 cup flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 1 egg
  • 1 can whole kernel corn
  • 1 log frozen cream corn, thawed
  • 1 1/2 cup shredded white cheddar cheese
  • Chopped green onions

Directions

Preheat oven to 350 degree.  Fry bacon until crispy.  Remove bacon and sauté onion in bacon grease.  Add garlic when onions are translucent and cook 1 more minute.  Chop bacon into bits.  Ina. Bowl combine flour, cornmeal, sugar, baking soda, and salt.  In separate bowl whisk sour cream, butter, and egg.  Then stir in corn, onion mixture and half of the bacon.  Add in dry ingredients and stir just until combined.  Pour in greased casserole dish.  Bake 35 minutes.  Remove from oven.  Top with cheese and remaining bacon.  Bake 5 more minutes.  Top with green onions.
