Ingredients:
- 6 eggs
- 1 cup heavy cream
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 2 4 ounce cans diced green chiles
- 2 cups shredded Mexican cheese
- 1 prepared pie crust (I use a deep dish frozen one)
Directions
Preheat oven to 425 degrees. Whisk eggs, cream, salt, and pepper. Place crust in pie plate. Prick crust with a fork several times.
Spread green chiles across the bottom of the crust, then cover with cheese. Pour egg mixture over. Bake 15 minutes at 425 degrees. Reduce heat to 300 degrees and bake an additional 30-40 minutes until quiche is puffy and lightly browned.
