Graham Cracker Toffee

Another delicious winter treat!


  • 13 sheets graham crackers
  • 1 cup chopped pecans
  • 1 cup butter
  • 1/2 cup sugar
  • 1 teaspoon vanilla


Preheat oven to 350 degrees. Line a large rimmed baking sheet with parchment paper.  Break graham crackers in half at perforations and then again make 4 pieces from each sheet.  Line as close to each other as possible.  In a medium sauce pan combine butter, sugar, and vanilla.  Stir until butter melts and mixture comes to a boil.  Boil for exactly 2 minutes, stirring.  Remove from heat and stir in pecans.  Pour over graham crackers and spread gently to make sure all pieces are covered.  Bake 8 minutes.  Remove from oven.  Let cool for only one minute then remove to a cooling rack one by one.
