Creamy Taco Soup

Taco Tuesday but make it soup!
Creamy Taco Soup

• 1 pound ground chuck
• 1 small onion, diced
• 1/2 cup red bell pepper, diced
• 2 cloves garlic, minced
• 1 tablespoon cumin
• 1 teaspoon chili powder
• 2 teaspoons sea salt
• Pampered Chef Tex-Mex seasoning (or any other Mexican seasoning), to taste
• 8 ounces cream cheese, softened
• 1 can Rotel
• 1 cup beef broth
• 1/2 cup heavy cream


In large soup pot brown the meat with onion, bell pepper, and garlic. Drain. Add spices and cook on low a few minutes. Stir in cream cheese, mashing with back of a wooden spoon until melted and smooth. Add in last 3 ingredients and simmer on low for 30 minutes.

*Serve with Taco Crescents!
