- 3 3/4 cup flour
- 2 1/4 cup sugar
- 1 1/2 teaspoon baking soda
- 2 teaspoons salt
- 2 teaspoons cocoa
- 2 3/4 cup oil
- 1 1/2 cups buttermilk at room temperature
- 3 eggs at room temperature
- 1 1/2 tablespoons red food coloring
- 1 1/2 tablespoons green food coloring
- 2 teaspoons vinegar
- 2 teaspoons vanilla
- 4 cups whipping cream
- 1 cup powdered sugar
- 1/4 cup instant vanilla pudding
Preheat oven to 350 degrees. Sift flour, sugar, cocoa, salt and baking soda. Set aside.
Using electric mixer whisk buttermilk and oil. Mix in eggs one at a time and then mix in vinegar and vanilla.
Mix dry ingredients into wet just until a batter forms. Divide batter evenly into separate bowls and stir red food coloring into one and green into the other. Bake until done.
Frosting: Chill the bowl and whisk attachment in freezer for 10 minutes. Pour all ingredients into bowl and whisk on high 5 minutes or until stiff peaks form. Layer cooled cake layers with frosting.
Before Hank got big enough to go on the weekend hunting trips he was my ultimate baking partner. We made this in 2019, and it is one of my favorites! He still hops on the counter from time to time and is always game to lick the bowl.
