Chop Slap Cornbread



  • 1 box Jiffy cornbread mix
  • 1/3 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/3 cup milk
  • 1/3 cup (heaping) sour cream
  • 4 tablespoons melted butter
  • 1 tablespoon vanilla


Preheat oven to 375 degrees.  Butter and grease a loaf pan or 10” skillet.  Sprinkle your baking dish with sea salt fairly liberally. Pour Jiffy into a bowl and break up the clumps with a fork.  Add all remaining ingredients.  Let sit for 5 minutes.  Pour into baking pan and bake until done.  Baking times will vary depending on what you bake it in.  Baking in a loaf pan will take longer so make sure the middle is done before removing from oven.
