- 8 ounces cheese tortellini
- 1 cup croutons
- 1/2 cup shredded Parmesan cheese
- 1 cup Caesar dressing
- 2 heads lettuce, chopped
- 2 chicken breasts seasoned with paprika, garlic powder, onion powder, dried oregano, cayenne, salt and pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
Cook tortellini according to package directions. Set aside.
Meanwhile slice each chicken breast in half lengthwise and pound with a meat tenderizer. Season each side with the spices above.
Heat skillet with olive oil and butter. Add chicken and sear 5 minutes on each side. Remove and dice. Let cool before adding to the salad. (You can also use any kind of grilled chicken for this)!
Toss lettuce with pasta, chicken, croutons, and Parmesan. Add dressing if serving immediately or serve it on the side.
