Ingredients:
- 1 package boneless skinless chicken thighs (can use breasts)
- 1 packet taco seasoning
- 1 can Rotel
- 1/2 cup chicken broth
- 1 can green chiles
- 1 can cream of chicken soup
- 3/4 cup salsa con queso (from a jar)
- Taco shells, chips and favorite taco toppings (lettuce, tomatoes, sour cream, salsa)
Directions
Lightly grease your slow cooker. Place chicken evenly in the slow cooker. Sprinkle with taco seasoning. Mix Rotel, broth, green chiles and soup. Pour over chicken. Cook on low 6-8 hours or high 3-5 hours. Drain excess liquid and then shred chicken. (Make sure you drain well so that the mixture does not become watery). After returning the drained mixture back to the slow cooker, add salsa con queso over the top to coat. Cover and let warm for 20 minutes. Serve via tacos!
