Ingredients:
- 2 cups flour
- 2 cups old-fashioned oats
- 3 sticks butter, softened
- 1 1/2 cup brown sugar
- 2 teaspoons vanilla
- 1/4 teaspoon kosher salt
- 1 1/2 cups soft caramels
- 1/4 cup whole milk or heavy cream
- Flaky sea salt
- 1 1/2 cup chocolate chips
Directions
Preheat the oven to 350 degrees. Grease a 9x13 baking pan and also line it with parchment paper.
In a large bowl mix flour, oats, butter, brown sugar, vanilla and kosher salt just until crumbly. Press half of the mixture into bottom of pan. Reserve the remaining mixture.
Bake until golden brown, 10 minutes. Let cool 10 minutes.
In a small sauce pan over low heat melt the caramels and milk/cream. Stir until smooth, about 5 minutes. Stir in sea salt. Pour this mixture over the baked base. Scatter chocolate chips over. Top with pieces of the reserved oat mixture.
Bake until oat crumble is golden brown and caramel is bubbling around the edges, about 25 minutes. Let cool until room temperature, then refrigerate until filling is set, another 30 minutes. Then slice!
