Blackened Chicken Bites

My boys are always happy to eat this one!


  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 teaspoon cayenne
  • 1 ½ pounds chicken tenderloins (or boneless skinless thighs)
  • 1 tablespoon olive oil
  • 2 tablespoons butter


In a large bowl whisk together all seasonings.  Cut chicken into bite size pieces and put in bowl.  Toss to coat.  Heat olive oil and butter in large skillet over medium-high heat.  Add chicken to pan in a single layer and cook 2-3 minutes each side to get a nice sear.  Flip and continue cooking 3-4 minutes.
