Bacon & Egg Holy Biscuits

  • 1 can of 8 biscuits
  • 4 slices bacon
  • Shredded cheddar cheese
  • 8 eggs
  • Kosher salt & pepper


Preheat oven to 375 degrees.  Line a sheet pan with parchment paper.  Cut the bacon slices in half to make 8 smaller slices.  Cook bacon to your preference.  Use a small paring knife of small circular cookie cutter to cut the center out of each biscuit.  Place the biscuits evenly on the cookie sheet as well as the centers you cut out.  Add a  bacon slice over the center of each biscuit, gently pressing the middle.  Sprinkle cheese over.  For the eggs, I cracked them over the sink and got rid of most of the egg white before pouring the egg yolk over the center of the biscuit.  Sprinkle with salt and pepper.  Bake until biscuits are done.

So so good and easy!  My boys loved being able to pick these up and eat on the go.
